Roasted Zucchini and Cherry Tomatoes

Indulge in this Mediterranean influenced, cheesy side dish.


1 large zucchini thinly sliced

1-2 cups cherry tomatoes

Olive oil

1 Tbsp Garlic Powder

1 Tbsp fresh garlic

1 Tbsp Onion Powder

1/4-1/3 cup Parmesan or Asiago cheese (more if desired)

Salt/Pepper to taste


Toss zucchini and cherry tomatoes in olive oil and all other ingredients besides cheese.


Spread zucchini slices evenly on baking sheet trying not to overlap then add cherry tomatoes. Sprinkle cheese over zucchini and tomatoes. Bake at 400 degrees for 30-40 min, or to desired crispness of zucchini.
